Nebbiolo makes the two most age-worthy wines in Italy: Barolo and Barbaresco. Both come from the Langhe hills of Piedmont, where autumn fog (nebbia) gives the grape its name. Young Barolo is notoriously austere — high tannin, high acidity, almost painful to drink. Given 15–20 years the transformation is startling: the colour fades to garnet, the tannins silk out, and complex tertiary notes of leather, dried flowers, and tobacco emerge. Few grapes reward cellaring so dramatically.
