Cabernet Sauvignon dominates the world's fine-wine lists for good reason: it combines bold tannins, deep color, and firm acidity into a wine built to age. In Bordeaux it forms the backbone of the great Médoc châteaux, blended with Merlot and Cabernet Franc. In Napa Valley it goes solo, producing wines of near-impossible concentration and fruit. Cool sites (Coonawarra, Maipo) add an herbaceous, mint-like note absent from warmer expressions.
